Becky’s Enchilada Meatballs

1 ½ pound ground beef
½ pound hot pork sausage
1 package (1 ¼ oz) Old EL PASO Taco Seasoning Mix
1 egg
¼ cup chopped onion
1 can OLD EL PASO Hot Enchilada Sauce
1 can (10 ¾ oz) cream of mushroom soup
1 can (10 ¾ oz) tomato soup
1 ½ (6 oz) shredded sharp Cheddar cheese (opitional)

Combine ground beef, pork sausage, seasoning mix, egg and onion: mix well. Shape into 1-inch balls. Place meatballs in a large skillet and brown on all sides. Drain fat. Combine enchilada sauce, soups and cheese (if using). Pour over cooked meatballs. Bring to a slow boil: reduce heat and simmer 20 minutes.

For a healthier alternative, substitute ground beef for ground chicken or turkey.
