Mr. Dean’s Creole Black-Eyed Peas

4 slices bacon
1 cup chopped onion
1 cup chopped green pepper
1 cup chopped celery
1 – 10oz can Rotel
2 – 16oz cans black eyed peas (or) 4 cups cooked peas
2 to 3 teaspoons sugar
1 bay leaf
Cook bacon in large skillet until crisp. Remove bacon, reserve drippings in skillet. Crumble bacon and set aside. Saute´ onion, green pepper and chopped celery in drippings until tender. Stir in Rotel, peas and sugar. Add bay leaf and half of the crumbled bacon. Cook over low heat 30-45 minutes, stirring occasionally. Add water if necessary. Remove bay leaf and sprinkle with remaining crumbled bacon just prior to serving.
Makes 6-8 servings.
