Beverly’s Unstuffed Cabbage Rolls

1 ½ to 2 lb ground beef, turkey or 1lb smoked sausage sliced into rounds
1 Tablespoon oil
1 onion, chopped
1 clove garlic, minced (if desired)
1 small cabbage, chopped
2 cans (15.4 oz) diced tomatoes
1 can (8 oz) tomato sauce
½ cup water
1 teaspoon salt
1 teaspoon pepper

Heat oil in a large skillet on medium heat and cook onion until tender. Add meat and cook till browned.

Add remaining ingredients and bring to a boil, cover and reduce heat.
Simmer about 25 minutes, until cabbage is fork tender.
