Mrs. Margaret’s Chicken and Sausage Jambalaya

1 small chicken cut into 2 inch pieces – rinsed & dried
½ cup oil
2 cups chopped onion
½ cup chopped bell pepper (any color)
1 cup chopped fresh parsley and green onions
2 packages smoked sausage sliced ¼ inches thick
3 cups long grain rice
8 cups water
1 tablespoon chopped garlic
Salt to taste
Ground cayenne pepper to taste

In a heavy skillet over medium heat, brown the chicken in the oil stirring meat around so it won’t stick. After chicken is browned, remove it from the pot. Add onions, bell pepper, parsley, green onions and sauté until onions are clear. Stir in sausage, rice, water, garlic, chicken, salt and pepper and continue cooking until nearly all of the water has boiled out. Reduce heat to low, cover and let simmer until rice is done (about an hour). Don’t lift lid for at least one hour.
