Mrs. Margaret’s Mexican Manicotti

1 pound of lean ground beef
2 cups Mexican blend shredded cheese
1 can refried black beans
1 package taco seasoning mix
1 10oz jar picante sauce
2 cups of sour cream
2 green onions sliced
1 small can sliced black olives
2 cups warm water
1-box Manicotti shells

Mix raw ground meat with taco seasoning, 1 cup of cheese and l can of refried black beans. Spray a large baking dish with cooking spray. Using the uncooked manicotti shells, place the meat mixture into the shells and place in a large baking dish. Pour the jar of picante sauce and the 2 cups of warm water over the stuffed shells.
Cover with foil and bake at 350 degrees for 1 to 1 ½ hours. When shells are done and dish is bubbly, top with sour cream, reserved cheese and olives.
Put back in oven for 5 to 10 minutes to melt cheese and removed from oven and top with green onions.
