Mrs. Sandy’s Caramel Popcorn


1 cup sugar
1/2 cup butter
1/2 cup dark corn syrup (blue label Karo is what I use)
1/2 tsp salt
1/2 tsp vanilla
4 quarts popped popcorn


Pop popcorn prior to beginning.

Melt butter in a sauce pan over medium heat. Add sugar, Karo, and salt. Cook over medium heat until it boils, then boil for 5 minutes. Remove from heat. Add vanilla and stir. Pour over popcorn and stir until evenly coated. Pour into a buttered, shallow pan (not a cookie sheet). Preheat oven to 250 degrees. Bake for 1 hour stirring every 15 minutes. Remove from the oven and let cool just enough so that you can work it with your hands. Break apart until corn kernels are separated.
