Uncle Jim’s Breakfast Burritos

1 lb. Breakfast sausage
1 10 oz. can Rotel
6 Eggs, scrambled
Cheese (cheddar or Fiesta Blend) or favorite cheese
Flour tortillas

Cook sausage and drain on paper towels.
Scramble eggs.
Let ingredients cool before assembly.
Layer ingredients on tortillas and roll into burrito, tucking ends to stop ingredients from falling out.

Wrap in wax paper to stop sticking together and put 4 burritos in quart freezer bags. Can freeze up to 8 weeks.

Warm in microwave for 1-2 minutes.

Alternative filling: turkey spiced like sausage for lower fat content.

Ole’ Xtreme Wellness High Fiber, low carb Tortilla Wraps (found at WalMart) for lower carbs than plain flour wraps.

Add onions, hot peppers or favorite vegetable for added flavors to excite taste buds.
