Lucy’s Fresh Apple Cake (Muffins)

2 cups sugar

2 cups all-purpose flour

1 TB baking powder

1 tsp salt

1 cup vegetable oil

1 cup chopped pecans

3 eggs

1 tsp ground nutmeg

1 tsp vanilla extract

3 cups diced peeled Fuji apples

Muffin paper liners

Turbinado cane sugar




Preheat oven to 350 degrees.


Mix together sugar, flour, baking powder, salt. Add vegetable oil, vanilla, and eggs. Mix until well blended. Add apples and nuts. Stir just to combine. Spoon into prepared muffin liners (about 1/4 cup or ice cream scoop, almost full) or into prepared Bundt pan if making cake.


I sprinkle a tiny bit of Turbinado Cane Sugar on top. It adds a little crunch and sweetness.


Bake 30 minutes for cupcakes. Bake 45 minutes to 1 hour for cake. Check for doneness before removing from oven.
