1 (15oz.) can spinach, drained
1 jar artichokes hearts, drained
5oz. Swiss cheese grated
¾ cup fried bacon
1/3-cup onions, diced and sautéed in bacon drippings
1 deep-dish pie crust
6 large eggs
½ cup half & half
½ tsp. salt
½ tsp. white pepper
Combine spinach, artichokes, cheese, sautéed onions, and fried bacon. Spread out in unbaked pie shell.
Combine eggs, half & half, salt and pepper; mix well. Pour over the mixture in the pie shell.
Bake at 400 degrees for 40 minutes or until a knife comes out clean. Great for breakfast!
