Ingredients:
4 eggs
2 c. sugar
1 c. oil
2 tsp. coconut flavoring
1/2 tsp. salt
3 c. flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1 c. buttermilk
2 c. coconut
1 c. chopped pecans
Directions:
Beat eggs in large mixing bowl; add sugar, oil and flavoring. Blend. Mix dry ingredients together and add egg mixture alternately with buttermilk. Fold in coconut and pecans. Bake in 2 greased and floured pans at 325 degrees for approximately 1 hour.
Topping:
1/2 c. water
1 c. sugar
2 tsp. margarine
Cook in saucepan for 4 1/2 minutes. Add 1 teaspoon coconut flavoring. Pour over hot bread. Let stand 4 hours, then refrigerate.
