1. Season steak and sit out on countertop to bring to room temperature.
2. Place on cooling rack on a cookie sheet and put in the oven at 250 degrees until internal temperature is 135-140 degrees for medium-rare (depending on thickness of steak, this will take 30-45 minutes.)
3. Take out of oven and let rest 15 minutes.
4. Sear in skillet on stovetop for 1 ½ – 2 minutes on each side.
