Mr. Dean’s Creole Black-Eyed Peas

4 slices bacon
1 cup chopped onion
1 cup chopped green pepper
1 cup chopped celery
1 – 10oz can Rotel
2 – 16oz cans black-eyed peas (or) 4 cups cooked peas
2 to 3 teaspoons sugar
1 bay leaf
Cook bacon in a large skillet until crisp. Remove bacon, reserve drippings in skillet. Crumble bacon and set aside. Saute onion, green pepper, and chopped celery in drippings until tender. Stir in Rotel, peas, and sugar. Add bay leaf and half of the crumbled bacon. Cook over low heat 30-45 minutes, stirring occasionally. Add water if necessary. Remove bay leaf and sprinkle with remaining crumbled bacon just prior to serving.
Makes 6-8 servings.
