Ingredients:
1 large eggplant
1 tsp. salt
2 eggs, beaten
1/2 c. onion
2 c. cornbread
2 TBSP. margarine
1/2 lb. shredded cheddar cheese
Directions:
Cook eggplant until tender. Drain thoroughly and mash. Add other ingredients. Pour in baking dish. Bake at 350 degrees until light brown for 25 minutes.
