Pam’s Blueberry Zucchini Bread

3 eggs, beaten

1 c. oil  (may substitute 1/2 c. oil & 1/2 c. applesauce)

3 tsp vanilla

2 1/4 c. sugar

2 c. grated zucchini

3 c. flour

1 tsp salt

1 tsp baking powder

1/4 tsp baking soda

1 Tbs. cinnamon

2 c. blueberries


Preheat oven to 350 degrees. Lightly grease 5 mini loaf pans.  In a large bowl beat eggs, oil, vanilla, and sugar.  Fold in the zucchini.  Beat in flour, salt, baking powder, baking soda, and cinnamon.  Gently fold in the blueberries.  Transfer to mini loaf pans.  Bake 40 to 50 min. or until a knife inserted in center of loaf comes out clean.  Cool 20 minutes in pan, then turn out onto wire racks to cool.
