The Carpenter’s Sugarless Cake

½ c. butter

1 ½ c. unsweetened applesauce

1 c. chopped dates

1 large egg or 2 small

1 tsp. vanilla

1 ½ c. flour (whole wheat is delicious)

1 ½ tsp. baking soda

½ tsp. ground cloves

½ tsp. cinnamon

½ tsp. salt

1 c. chopped pecans



Preheat oven to 350 degrees. Mix butter, applesauce, and dates. Bring to a boil, stirring constantly. Cool to lukewarm, add egg and vanilla. Sift together flour, soda, salt, and spices. Add to first mixture. Beat until blended. Stir in nuts. Bake in a well-greased and lightly floured loaf pan for 1 hour. (Test after 45 minutes.)
